Mom's Prize Lemon Meringue Pie Recipe
- 1 1/2 c. sugar
- 1/4 c. plus 2 tbsp. cornstarch
- 1 tbsp. flour
- 1/8 teaspoon salt
- 1/2 c. lemon juice
- 3 egg yolks, well beaten
- 1 1/2 c. boiling water
- 1 tbsp. grated lemon rind
- 1 c. cool water
- 1 baked 9 inch pie shell
- Blend sugar, cornstarch, flour and salt in medium saucepan.
- Add in lemon juice, rind, cool water, beaten egg yolks, blending till very smooth.
- Add in boiling water.
- Bring to a boil over medium heat, stirring constantly, then boil 2-3 min.
- Remove from heat.
- Stir filling occasionally till hot.
- When cold, add in to pie shell.
- MERINGUE: Beat 3 egg whites, cream of tartar.
- Add in sugar gradually.
- Apply to top pie filling.
- Bake at 350 degrees for 10-13 min.
