Mom's Prize Lemon Meringue Pie Recipe

  1. Blend sugar, cornstarch, flour and salt in medium saucepan.
  2. Add in lemon juice, rind, cool water, beaten egg yolks, blending till very smooth.
  3. Add in boiling water.
  4. Bring to a boil over medium heat, stirring constantly, then boil 2-3 min.
  5. Remove from heat.
  6. Stir filling occasionally till hot.
  7. When cold, add in to pie shell.
  8. MERINGUE: Beat 3 egg whites, cream of tartar.
  9. Add in sugar gradually.
  10. Apply to top pie filling.
  11. Bake at 350 degrees for 10-13 min.
