Blueberry Ice Cream Recipe
- 4 c. picked over blueberries
- 1 c. sugar
- Zest of 1 navel orange, removed in strips with a vegetable peeler
- 2 tbsp. orange flavored liqueur
- 3 tbsp. fresh lemon juice
- 1/2 teaspoon vanilla
- 1/8 teaspoon salt
- 2 c. heavy cream
- 1 c. half & half
- In a large saucepan, combine the blueberries, sugar, zest, and 1/4 c. water; boil the mix, covered, for 15 min, stirring occasionally.
- Simmer, covered, for 15 min.
- Throw away zest and puree the mix in batches in a blender or possibly food processor.
- Transfer the puree to a bowl and whisk in the orange liqueur, the lemon juice, the vanilla, the salt, heavy cream, and half & half.
- Force the mix through a very fine sieve set over another bowl and chill, covered, for 1 hour or possibly till it is cool.
- Freeze mix in an ice cream freezer according to the manufacture's instructions.
- Makes 1 1/2 qts.
