My moms yeast rolls
- 8 cup ap flour
- 2 packages active dry yeast rapid rise
- 1/4 cup lukewarm water
- 1 tsp sugar
- 2 cup milk scalded
- 2 tsp salt
- 1/2 cup sugar
- 2 large eggs beaten
- 1/3 cup melted butter
- 1/3 cup melted vegetable shortning
- Shift flour and measure
- Mix yeast and lukewarm water add sugar let sit 10 minutes.
- In s 4 quart/liter bowl combine hot milk with salt sugar and cool till lukewarm temperature, add yeast mixture and eggs and stir thoroughly.
- Beat in half the flour until smooth, then the cooled shortening.
- Stir in all but 2 tablespoons of rest of thr flour mix in thoroughly by hand.
- Turn out on board or pastry cloth sprinkle with rest of flour cover with bowl let rest 10 minutes.
- Then knead till dough is smooth and elastic about 10 minutes adding more flour for kneading
- Shape into ball set into a bowl you can spray with nonstick or grease the bowl with vegetable shortening.
- Then spray the top side with nonstick cover with damp cloth, let it rise about 1 1/2 hours
- Preheat oven 400 Fahrenheit after the 1 1/2 hours
- Punch down on the dough turn dough over again, let rise till double then shape rolls as desired.
- Put on pan brush with melted butter bake 20-25 minutes till browned on top
