Blueberry Delight
- 1 lb vanilla wafer
- 14 lb oleo
- 2 eggs, seperated
- 12 pint whipped cream
- 1 cup powdered sugar
- 1 (21 ounce) can blueberry pie filling
- Crush wafers, line bottom of 13x9 pan.
- save some for topping.
- blend egg yolks, powdered sugar, and butter until creamy.
- add pinch of salt to egg whites.
- beat till stiff.
- fold creamed mixture into egg whites.
- spread over crushed wafers.
- spread pie filling over the layer.
- whip cream spread over top.
- sprinkle remaining wafers.
- refrigerate 24 hours before serving.
