Penne Pasta With Vodka Sauce Recipe

  1. Heat the butter in a large frying pan.
  2. When the butter foams, add in the diced pancetta.
  3. When the pancetta browns slightly (takes 2 to 3 min), add in the vodka and stir.
  4. After the alcohol burns off, stir in the tomato sauce and cream (the alcohol only takes a minute or possibly two to burn off).
  5. Stir continuously for 5 - 8 min.
  6. Place liquid removed pasta into frying pan, add in Parmesan cheese, and mix thoroughly for about 2 min.
  7. Serves 4 to 6.
