Danish Shavuot Cheesecake
- 6 eggs
- 2 cups white sugar
- 1 cup all-purpose flour
- 1 cup low fat cottage cheese
- 1 tablespoon baking powder
- 1 tablespoon vanilla
- 1 lemon, juice and zest of
- Turn the oven on to 390F.
- In a large bowl beat the egg yolks with 1 cup of sugar, vanilla and the lemon juice until thick and fluffy.
- In another bowl, blend the cottage cheese and once smooth, mix it well with the other cup of sugar, then fold in the flour and baking powder.
- Now mix the two batters.
- Then whip the egg whites until stiff and finally gently fold these inches.
- Pour into well buttered pan and bake in the middle of the oven for 45-50 minute.
