Black Berry Dumplings Recipe
- 1 quart Fresh or possibly frzn blackberries
- 1 c. Plus 1 Tbsp. sugar
- 3/4 tsp Salt, divided
- 1/2 tsp Lemon extract
- 1 1/2 c. All-purpose flour
- 2 tsp Baking pwdr
- 1/4 tsp Grnd nutmeg
- 2/3 c. Lowfat milk - (Cream or possibly whipped cream optional)
- Preheat oven to 400 degrees.
- In a Dutch oven, combine the blackberries, 1 c. sugar, 1/4 tsp salt and lemon extract.
- Bring to a boil.
- Reduce heat and simmer for 5 min.
- In a mixing bowl, combine the flour, baking pwdr, nutmeg, 1 Tbsp.
- sugar, and remaining salt.
- Add in the lowfat milk.
- Stir just till mixed.
- Dough will be very thick.
- Drop by tablespoonfuls into six mounds onto the warm blackberry mix.
- Bake at 400 degrees for 35 to 45 min.
- Serves 6.
- Variation: Substitute a 9 inch pie crust for the dumpling mix.
- Just cut the dough into squares and add in to blackberry mix.
- Cook as above.
