AMIEs Crumbed BEEF Fillet
- 4 thick (2 cm) slices beef fillet
- 2 large eggs, lightly beaten
- 2 cup breadcrumbs
- 1 cup plain flour
- 1/2 cup vegetable oil or 100 grams butter
- 1 salt and ground black pepper
- 1 lemon, cut into wedges (optional)
- Place the flour in a shallow bowl.
- Season and beat the eggs with salt and pepper in a separate bowl.
- Put the breadcrumbs in a shallow bowl.
- Crumb the beef slices, dipping each one in flour, followed by egg and then the breadcrumbs.
- Preheat the oil or butter in a large heavy based frying pan over medium heat.
- Fry for 3-4 minutes on each side until golden brown.
- Transfer to a serving tray lined with paper towel to drain.
- Season with salt and serve with lemon wedges, if desired.
- We can serve this beef fillets with cherry tomatoes and insalata mista (mixed vegetable salad).
