Thai Peanut Chicken Skewers

  1. Combine first nine ingredients together and put in a zip-lock bag toss to make sure your chicken is covered well with the marinade.
  2. Refrigerate for about 45 minutes to an hour.
  3. After chicken is marinaded, place on skewers, weaving the chicken as you skewer it.
  4. You can fit about 4 to 5 pieces of chicken on each skewer.
  5. (If you are using bamboo skewers make sure to soak them before using them) Grill for about 8 minutes on each side.
  6. While chicken is grilling, combine the next 8 ingredients to make the sauce.
  7. After these ingredients are mixed together add the peanut butter and hot water.
  8. Whisk together until smooth.
  9. Have fun dipping!
