Broccoli and Cheese Rice
- 1 bag Success White Rice or Success Brown Rice
- non-stick cooking spray
- 1 box (10 oz.) frozen broccoli spears, thawed and drained
- 1 cup (6 oz.) shredded cheddar cheese, divided
- 1 can (10-3/4 oz.) condensed cream of mushroom soup
- 3 Tbsps butter, melted
- 1/2 cup evaporated milk
- 1/2 cup water
- 1 Tbsp. onion, freshly grated Safeway 1 lb For $1.49 thru 02/09
- 1/2 tsp. salt
- 1/2 tsp. pepper
- Preheat oven to 350F.
- Prepare rice according to package directions.
- Coat a 2-quart casserole dish with non-stick cooking spray.
- In a medium bowl combine broccoli, 1/2 cup cheese, soup, butter, evaporated milk, water, onion, salt and pepper.
- Fold in rice.
- Pour mixture into prepared dish and top with remaining 1/2 cup cheese.
- Bake 20 minutes.
