Creamy Tomato Tortellini
- 1 (350 g) package cheese (fresh or frozen) or 1 (350 g) package tortellini (fresh or frozen)
- 2 cups frozen broccoli florets
- 1 (540 ml) can diced tomatoes, undrained
- 12 cup philadelphia cream cheese with garlic and herbs
- 14 cup parmesan cheese, grated
- Cook pasta as directed on package; add broccoli to the boiling water for the last 3 minutes of the pasta cooking time.
- Meanwhile, cook tomatoes in large skillet on medium heat 5 minutes.
- Add cream cheese spread; cook 2-3 minutes or until cream cheese is completely melted and mixture is well blended, stirring frequently.
- Drain pasta mixrture.
- Add to tomato mixture in skillet; mix lightly.
- Sprinkle with Parmesan cheese.
