Healthy No-Bake Peanut Butter Bites
- 1/2 cups Coconut Flakes
- 1 cup Old Fashioned Oats
- 1/4 cups Ground Flax Seed
- 1/4 cups Pepitas
- 13 cups Honey
- 1/2 cups Creamy Peanut Butter
- 1/2 teaspoons Vanilla Extract
- 1/4 teaspoons Ground Cinnamon
- 18 teaspoons Salt
- Heat a small skillet over medium-low heat.
- Add coconut and heat it.
- Make sure to watch it carefully, stirring often, until the flakes are lightly toasted.
- Remove from heat.
- In a large bowl, stir together the oats, coconut flakes, flax seed, and pepitas.
- Add the honey, peanut butter, vanilla, cinnamon and salt and stir until it comes together.
- I used my hands and found that was easier for everything to come together.
- Refrigerate for 30-60 minutes and then roll into 1-inch balls.
- Store in the refrigerator.
- If you prefer, you can sub any kind of nut butter, Nutella or Biscoff for the peanut butter.
- You can also trade in sunflower seeds, almonds, soy nuts, walnuts, etc.
- for the pepitas.
