Apple Pear Pandowdy
- 1 cup firmly packed brown sugar
- 1/2 cup Land O Lakes Butter, softened
- 2 tablespoons all-purpose flour
- 1/4 teaspoon ground cinnamon
- 2 tablespoons lemon juice
- 3 to 4 medium (2 cups) apples, peeled, cored, sliced 1/8-inch
- 2 to 3 medium (2 cups) pears, peeled, cored, sliced 1/8-inch
- 1 1/2 cups pancake and baking mix
- 1/2 cup milk
- 1 tablespoon sugar
- 1/4 teaspoon ground cinnamon
- Vanilla ice cream or Land O Lakes Heavy Whipping Cream, whipped
- Heat oven to 400F.
- Combine all fruit mixture ingredients except apples and pears in bowl.
- Beat at medium speed, scraping bowl often, until well mixed.
- Add apples and pears; toss to coat.
- Combine sugar and cinnamon in bowl.
- Sprinkle sugar mixture over biscuits.
- Return to oven, uncovered; continue baking 15-20 minutes or until biscuits are lightly browned.
- Serve warm with ice cream or whipped cream.
