Bourbon Pork Tenderloin Recipe
- 1 c. confectioners' sugar
- 2 Tbsp. bourbon
- 1 Tbsp. water
- 1 tsp vanilla extract
- 1 1/2 lb pork tenderloin - (to 2) two tenderloins
- 1/2 tsp salt
- 1/4 tsp freshly-grnd black pepper
- Preheat the oven to 350 degrees.
- Line a 7- by 11-inch baking dish with aluminum foil then coat with nonstick cooking spray.
- In a medium bowl, combine the confectioners' sugar, bourbon, water, and vanilla, mix well and set aside.
- Season the pork tenderloins with the salt and pepper, place in the baking dish.
- Spoon half of the sugar mix over the pork and roast for 45 min.
- Remove from the oven and spoon the remaining sugar mix over the tenderloins.
- Roast for 5 - 10 min or possibly till no pink remains.
- Cut into 1/4-inch-thick slices and serve with the sauce from the pan.
- This recipe yields 4 servings.
- Comments: If you prefer, you can substitute apple cider for the bourbon.
- You know, lining the pan with aluminum foil makes cleanup really easy.
