Belgian Gaufres Bruxelloises (Brussels Beer Waffles)
- 3-1/2 cup sifted all purpose flour
- 1/2 tsp. salt
- 1/2 cup cooking oil
- 3 cups light beer
- 2 eggs
- 2 tbsp. grated lemon rind
- 1 tsp. fresh lemon juice
- 1/2 tsp. vanilla extract
- Combine all ingredients in a deep bowl.
- Beat until smooth.
- Let stand at room temperature for 2 hours to rise slightly.
- Or, if for breakfast, store unrisen in refrigerator overnight and use without further rising.
- Spread batter on waffle iron; use only a small quantity to insure crispness.
- Watch while baking; waffes brown quickly.
- The beer acts as a leavening and leaves no trace whatsoever in these light crisp waffles.
- Good with sour cream and brown sugar.
- Makes 14 to 16 waffles.
