Belgian Gaufres Bruxelloises (Brussels Beer Waffles)

  1. Combine all ingredients in a deep bowl.
  2. Beat until smooth.
  3. Let stand at room temperature for 2 hours to rise slightly.
  4. Or, if for breakfast, store unrisen in refrigerator overnight and use without further rising.
  5. Spread batter on waffle iron; use only a small quantity to insure crispness.
  6. Watch while baking; waffes brown quickly.
  7. The beer acts as a leavening and leaves no trace whatsoever in these light crisp waffles.
  8. Good with sour cream and brown sugar.
  9. Makes 14 to 16 waffles.
