Tuna Fish Salad Recipe
- 2 (12 1/2 ounce.) cans light tuna fish, packed in water, well liquid removed
- 1/2 c. plus 2 tbsp. mayonnaise
- 2 tbsp. vinegar
- 2 tbsp. sugar
- 3 dashes each salt and pepper
- 2 stalks celery, minced
- 1 tbsp. onion, minced fine
- 4 tbsp. sweet pickle relish
- 2 hard cooked Large eggs, minced
- Drain tuna fish well.
- While tuna is liquid removed, mix sugar, vinegar, salt, pepper and mayonnaise till smooth, set aside.
- Lightly toss together tuna, celery, onion and pickle relish.
- Add in Large eggs and finish mixing lightly.
- Pour mayonnaise mix over tuna and Large eggs.
- Stir gently.
- Chill till ready to serve.
- Serve on leaf of lettuce.
- Garnish with sprig of parsley.
- Serve with dill spears and chips on luncheon plate.
