Tuna Luncheon Salad Recipe
- 1 lg. can tuna (Albacore is best)
- 1 can garbanzo beans
- 1/4 c. finely minced celery
- 1/4 c. shredded carrot
- 2 tbsp. finely minced onion
- 1 can sliced water chestnuts
- 1/2 c. mayonnaise
- 1 tbsp. lemon juice
- Salt & fresh green pepper
- Flake tuna in mixing bowl.
- Rinse beans.
- Combine all ingredients, mixing lightly so beans are not crushed.
- Serve on lettuce leaf with toasted Parmesan cheese bread.
- Additional ingredients to taste: toasted sesame seeds, capers, garlic, toasted almonds.
