Fridge leftovers scrambled eggs.
- 1/2 an onion, chopped
- 1/2 packages of spinach, steamed
- 1 1/2 Tomato, chopped
- 2 eggs
- dash of semi skimmed milk
- pinch of salt
- dash of pepper
- 2 slices of bread, toasted and halved
- tsp of olive oil
- 2 tsp water
- Chop onions and tomatoes.
- Crack eggs into a bowl and whisk with milk.
- Preheat saucepan and add Olive oil.
- Put in chopped veg.
- On a moderate heat place spinach in another saucepan with 2 teaspoons of water.
- Cover and leave for 4 minutes.
- Fry the onions, tomatoes to your liking and add the spinach when ready.
- Keeping at a moderate temperature add the eggs, leave for twenty seconds and start to fold the mixture.
- Toast the bread to your liking, cut in half and ready them on a plate.
- Keep folding the mixture for 3-4 minutes.
- Add salt and pepper to taste.
- Once the mixture is to your liking, serve directly onto toast and enjoy!
