Fridge leftovers scrambled eggs.

  1. Chop onions and tomatoes.
  2. Crack eggs into a bowl and whisk with milk.
  3. Preheat saucepan and add Olive oil.
  4. Put in chopped veg.
  5. On a moderate heat place spinach in another saucepan with 2 teaspoons of water.
  6. Cover and leave for 4 minutes.
  7. Fry the onions, tomatoes to your liking and add the spinach when ready.
  8. Keeping at a moderate temperature add the eggs, leave for twenty seconds and start to fold the mixture.
  9. Toast the bread to your liking, cut in half and ready them on a plate.
  10. Keep folding the mixture for 3-4 minutes.
  11. Add salt and pepper to taste.
  12. Once the mixture is to your liking, serve directly onto toast and enjoy!
