Caribbean Cobb Salad
- 1 small rotisserie chicken
- 13 c. mango chutney
- 13 c. fresh lime juice
- 1 bag romaine salad mix
- 1 large red pepper
- 2 mangoes, peeled, pitted, and cut into thin strips
- 2 c. packaged shredded carrots
- Remove skin and bones from chicken; coarsely shred meat.
- Make mango dressing: In small bowl, stir chutney and lime juice until blended, breaking up any large pieces of fruit with side of spoon.
- Set aside.
- Place romaine on platter; arrange pepper strips, mangoes, chicken, and carrots on top.
- Serve with dressing.
