Roasted Potatoes With Sea Salt

  1. Preheat the oven to 350 degrees.
  2. Arrange potatoes in a single layer in a large roasting pan.
  3. Pour the oil over them and turn to coat well.
  4. Sprinkle with the salt, turn again, and tuck in the sage sprigs.
  5. Roast until the skins are slightly wrinkled and the interior is tender and creamy when pierced with the top of a sharp knife, about 1 1/2 hours.
