Filled Sandwich Creams
- 1 cup firmly packed brown sugar
- 1/2 cup Land O Lakes Butter, softened
- 1 Land O Lakes Egg
- 2 1/4 cups all-purpose
- 1 cup milk
- 1/3 cup unsweetened cocoa
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 (12-ounce) can soft whipped white frosting
- Multi-colored decorator nonpareils
- Heat oven to 350F.
- Combine brown sugar, butter and egg in bowl.
- Beat at medium speed, scraping bowl often, until creamy.
- Add all remaining cookie ingredients; beat at low speed until well mixed.
- Drop by tablespoonfuls onto ungreased cookie sheets; spread, using back of spoon, into 1 1/2-inch circles.
- Bake 6-8 minutes or until cookies are puffed and set.
- Cool completely.
- Spread about 2 tablespoons frosting onto bottom-side of 1 cookie; top with second cookie, bottom-side down.
- Squeeze together gently.
- Immediately roll edges of filling in decorator nonpareils.
- Repeat with remaining cookies and filling.
