Healthier Queso Dip
- 8 ounces, weight Sharp Cheddar Cheese, Shredded
- 8 ounces, weight Monterey Jack Cheese, Shredded
- 2 Tablespoons Cornstarch
- 1 can Evaporated Milk, 12 Oz Can
- 1 Tablespoon Hot Sauce
- 1 can Black Beans, Drained And Rinsed (15 Oz. Can)
- 1 can Rotel Diced Tomatoes And Green Chiles, Drained ( 10 Oz Can)
- Tortilla Chips For Serving

- In a medium sized saucepan, toss together the shredded cheeses and cornstarch until evenly coated.
- Stir in the evaporated milk and hot sauce.

- Cook over medium heat for about 10 minutes or until cheese is melted, stirring often.
- 3.
- Once cheese is melted, add drained black beans and drained Ro-tel.
- Cook until heated through then remove from heat.
- Serve with tortilla chips.
