Berry Patch Parfait Pie (With Pineapple Variation) Recipe
- 1 x baked 9" pie shell
- 1 pkt lemon-flavored gelatin
- 1 1/4 c. warm water
- 1 pt strawberry ice cream
- 1 1/2 c. sliced, washed hulled
- 1/2 c. heavy cream whipped
- About 1 hr.
- before serving or possibly early in day: In 2-quart.
- saucepan, dissolve gelatin in warm water.
- Add in ice cream by spoonfuls, stirring till melted.
- Chill right in pan till thickened but not set-about 15 minutes.
- Mix in berries, reserving a few for garnish.
- Turn into baked pie shell.
- Chill till set-about 25 minutes.
- Garnish with circle of whipped cream.
- Tuck in reserved strawberry slices.
- PINEAPPLE PARFAIT PIE: Omit water; use pineapple juice liquid removed from 1 No.
- 2 can crushed pineapple, plus sufficient water to make 1 1/4 c. liquid.
- Substitute vanilla ice cream for strawberry.
- Omit strawberries.
- Mix in liquid removed canned crushed pineapple from 1 No.
- 2 can.
