Berry Patch Parfait Pie (With Pineapple Variation) Recipe

  2. before serving or possibly early in day: In 2-quart.
  3. saucepan, dissolve gelatin in warm water.
  4. Add in ice cream by spoonfuls, stirring till melted.
  5. Chill right in pan till thickened but not set-about 15 minutes.
  6. Mix in berries, reserving a few for garnish.
  7. Turn into baked pie shell.
  8. Chill till set-about 25 minutes.
  9. Garnish with circle of whipped cream.
  10. Tuck in reserved strawberry slices.
  11. PINEAPPLE PARFAIT PIE: Omit water; use pineapple juice liquid removed from 1 No.
  12. 2 can crushed pineapple, plus sufficient water to make 1 1/4 c. liquid.
  13. Substitute vanilla ice cream for strawberry.
  14. Omit strawberries.
  15. Mix in liquid removed canned crushed pineapple from 1 No.
  16. 2 can.
