Aluwala Roti Recipe

  1. Sift flour with salt.
  2. Slowly add in water.
  3. Mix well.
  4. Make a stiff dough.
  5. Cover with a damp cloth for 20 min.
  6. Boil potatoes, peel and mash.
  7. Add in salt, onion, pepper and coriander.
  8. Mix well.
  9. Divide into 8 portions.
  10. Knead dough well till smooth and pliable.
  11. Divide into 6 round balls.
  12. Flatten each ball slightly.
  13. Put one portion of filling in centre.
  14. Close up completely.
  15. Shape into round balls again.
  16. Roll out each ball on a lightly floured board into a round disk 6" (15 cm)
  17. diameter.
  18. Cook one at a time on a warm griddle over medium heat.
  19. Put about 1 or possibly 2 tbsp ghee around the edge.
  20. Turn gently.
  21. Cook till sides turn golden in colour.
  22. Serve with yogurt.
