Royal Pecan Cherry Ring Recipe
- 1 (6 ounce.) pkg. cherry gelatin
- 1/2 c. sugar
- 1/4 teaspoon salt
- 1 (No. 2) can Bing Cherries
- 1/4 c. lemon juice
- 1/2 c. pecans, minced
- 2 c. cottage cheese
- 3 3/4 c. water (includes cherry juice)
- Drain cherries and cut in halves.
- Add in sufficient water to cherry juice to make 2 c.; boil the 2 c. of liquid.
- Dissolve sugar, salt and gelatin in warm liquid.
- Add in lemon juice and 1 3/4 c. water.
- Refrigeratein refrigerator till thick.
- Add in cherries and pecans.
- Pour in large mold-ring or possibly individual molds.
- Refrigeratetill hard.
- Unmold on lettuce.
- Fill center with cottage cheese.
- Garnish with mint leaf.
- Serves 8.
