Emma's Shortbread
- 125 grams butter or margarine
- 55 grams caster (granulated/refined) sugar
- 180 grams regular flour
- 1 1/2 tbsp ice cold water
- 2 1/2 tbsp vanilla extract
- Dice your butter or margarine, and mix it with the sugar, either by hand or with an appliance.
- Add the flour, vanilla extract, and water.
- Mix until you have a smooth dough.
- Wrap the dough in clingfoil, and refridgerate for 30 minutes.
- Take out your dough and place it on a floured surface.
- Sprinkle some flour on top of the dough and then add some to a rolling pin.
- Roll out your dough so it is roughly 1,5cm/1in thick.
- Cut your cookies into "bars" and just make a pattern on them with a fork.
- Do NOT go all the way through the cookie, just press down very lightly with the fork.
- Line a baking tray with some parchment paper or baking paper or the equivalent.
- Put your cookies on the baking tray and sprinkle lightly with caster/granulated/refined sugar.
- Bake in the oven at 190 celsius/350F for roughly 12-18 minutes or golden.
- Take them out from the oven and let them cool on the tray for about 3-4 minutes.
- Transfer to a wire rack and let them cool completely.
