BBQ Tennessee Pork Loin

  1. Remove silver skin and excess fat from pork loin.
  2. Mixed up the marinade ingredients and place in a ziplock bag with the pork loin.
  3. Refrigerate for 24 hours.
  4. Flip and rotate several times.
  5. Set up your grill for Indirect Heat with a drip pan in the middle.
  6. Remove the pork loin from the marinade and place on the grill over the drip pan.
  7. Close the lid and cook at 350F.
  8. Place marinade in a small pan and bring to a gentle boil.
  9. Add 1 tablespoon of mustard and 1 tablespoon of bourbon.
  10. Simmer for 2 or 3 minutes (being careful not to scorch it).
  11. Once the internal temperature of the pork loin is 120F begin to glaze with sauce.
  12. Continue cooking & Glazing until the internal temperature is 145F.
  13. Let it rest for 10 to 15 minutes before carving and serving.
