Delicious Chicken Cutlets For Two Recipe
- 2 chicken cutlets, lb. till flat
- Frzn spinach, cook and drain well
- Butter, as desired
- Sharp white Cheddar cheese, as desired
- Salt and pepper to taste
- 1 teaspoon extra virgin olive oil
- 1 teaspoon butter
- 2 cloves garlic
- 1 1/2 c. Marsala
- Serve with spaghetti with dash of nutmeg, if you like.
- Lb.
- chicken till flat.
- Cook frzn spinach and drain well.
- Put liquid removed spinach in middle of chicken cutlet.
- Flatten down, add in pats of butter.
- Cut sharp white Cheddar cheese in small pcs.
- And add in some cheese into spinach too.
- Salt and pepper.
- Roll chicken, put skewers in to keep spinach and cheese from spilling out.
- In frying pan, add in 1 tsp.
- extra virgin olive oil and 1 tsp.
- butter, 2 cloves garlic, chop fine, heat.
- Add in chicken, brown 1 minute.
- Add in 1/2 c. marsala wine, cover and cook 10 min.
- Flip when needed.
- Cook till dissolved.
- Add in 1 c. marsala, uncover and cook till chicken is done.
- Remove chicken cutlets.
- Add in flour and lowfat milk to juice, cook till done.
- Add in dash of nutmeg to sauce.
- Pour over chicken when done and serve.
