Homemade Cracker Jack
- 1 cup salted peanuts
- 10 cup popped popcorn
- 1/4 cup light corn syrup
- 1/2 tsp baking soda
- 1 cup brown sugar
- 2 tsp vanilla extract
- 1/2 cup butter
- 1 tbsp water
- Preheat oven to 350 degrees .
- Line a baking sheet with parchment paper.Spray a large bowk with cooking spray.
- Add popped popcorn and nuts.
- Combine br.
- Sugar, cornsyrup, butter and water in a pan simmer over medium high heat until temperature reaches 250 degrees .
- Hard ball stage.
- Remove from heat.
- Add vanilla and soda pour over popcorn.
- Gently stir carmel over carmel until well coated.
- Pour mixture onto prepared pan.and spread out.
- Bake 1 hour.
- Stirring every 15 minutes.
- Remove from oven.
- Allow to cool.
- Carefully break up and store in air tight container.
