Extrordinary Taco Soup
- 2 lb ground chuck
- 1 onion, chopped
- 1 jalepeno pepper, chopped and deveined
- 2 tbsp taco seasoning
- 1/2 tsp pepper
- 1 (26 ounce) can tomato sauce
- 1 (15 ounce) can crushed tomatoes
- 1 (4 ounce) can chopped green chiles
- 1 (14 ounce) can hominy, drained
- 2 (15 ounce) cans pinto beans, drained
- 2 tbsp buttermilk ranch dressing mix
- 1 (15 ounce) can Rotel tomatoes with green chiles
- In a large pot over medium high heat, brown the ground chuck and onion, stirring frequently, 6 to 10 minutes.
- Drain well.
- Add the remaining ingredients and bring to a simmer for 45 minutes.
- Serve with tortilla chips, sour cream, shredded cheese, raw onions, or other toppings as desired.
