Black Bean Guacamole Recipe
- 2 Tbsp. fresh squeezed lemon juice
- 2 x ripe (but hard) avocados, peeled, pitted and cubed
- 1 x (15-ounce.) can black beans, liquid removed and rinsed
- 1 Tbsp. extra virgin olive oil
- 1/2 c. red onion, minced fine
- 1 tsp minced garlic (or possibly more to taste)
- 1/2 tsp salt (or possibly to taste)
- 3 dsh jalapeno sauce (or possibly to taste)
- 2 Tbsp. prepared salsa (mild, medium or possibly warm)
- 2 Tbsp. finely minced cilantro (optional)
- Put lemon juice into a large bowl.
- Add in avocado cubes and mash lightly with fork, leaving some pcs intact.
- Place black beans in a shallow dish and drizzle with extra virgin olive oil.
- Mash beans lightly with fork, leaving some intact.
- Add in beans to bowl with avocado; add in remainder of ingredients and blend well.
- Taste and correct seasonings.
- Add in more salsa if mix is too dry.
- Guacamole will be light brown, like bean dip.
- Serve with tortilla chips or possibly use on whole-wheat bread as a delicious sandwich spread.
- Makes 2 c..
