Tropical Lime Bars
- 2 cups all-purpose flour
- 1/2 cup powdered sugar
- 2 teaspoons freshly grated lime zest
- 1 cup cold Land O Lakes Butter
- 1 1/2 cups sugar
- 1/3 cup lime juice
- 1/4 cup all-purpose flour
- 4 Land O Lakes Eggs, slightly beaten
- 2 teaspoons freshly grated lime zest
- 1/2 teaspoon baking powder
- 1/4 cup sliced almonds
- 2 tablespoons powdered sugar
- Heat oven to 350F.
- Combine 2 cups flour, 1/2 cup powdered sugar and 2 teaspoons lime zest in bowl; cut in butter with pastry blender or fork until mixture resembles coarse crumbs.
- Press onto bottom of ungreased 13x9-inch baking pan.
- Bake 20-22 minutes or until edges are lightly browned.
- Combine all filling ingredients except almonds and powdered sugar in bowl; mix well.
- Spread over hot, partially baked crust; sprinkle with almonds.
- Continue baking 23-28 minutes or until edges are lightly browned.
- Cool completely.
- Sift powdered sugar over cooled bars.
- Cut into bars.
