Berry Clafoutis
- 1 tablespoon caster sugar
- 200g mixed berries, fresh or frozen Safeway 1 lb For $3.99 thru 02/09
- 125g PHILADELPHIA Light Spreadable Cream Cheese, softened
- 1/2 cup caster sugar, extra
- 1/4 cup flour, sifted
- 1 teaspoon vanilla extract
- 3 eggs
- 1/2 cup milk
- icing sugar, to serve
- Sprinkle sugar over the base of 4 x 1 cup capacity greased shallow ovenproof dishes.
- Divide berries evenly between the dishes.
- Whisk together the Philly*, extra sugar, flour, vanilla and one egg until smooth.
- Add remaining eggs and milk and whisk until smooth.
- Pour mixture evenly over berries.
- Bake at 200C for 20 minutes or until golden and cooked.
- Dust with icing sugar and serve warm.
