Herbed Potato Crackers With Cheese(Yields 8 Servings)
- 2 Tbsp. butter, melted
- 2 medium baking potatoes (1 lb. total)
- flat-leaf Italian parsley
- 3 oz. goat cheese, sliced or 3 oz. cottage cheese with minced chives is a nice substitute
- Heat oven to 375u0b0.
- Brush baking sheet with some melted butter.
- With a very sharp knife or a mandoline slicer, thinly cut one unpeeled potato lengthwise into about 24 (1/16-inch thick) slices.
- Arrange potato slices on buttered baking sheet and brush top of each with some melted butter.
- Place one or two parsley leaves on each potato slice.
- Thinly slice remaining potato; place one slice to cover parsley.
- Brush top with melted butter.
- Bake potato crackers 10 minutes; turn over and bake until golden brown and crisp, about 10 minutes longer.
- Arrange crackers on serving plates.
- Top each with some goat cheese or cottage cheese spread and serve.
