Herbed Potato Crackers With Cheese(Yields 8 Servings)

  1. Heat oven to 375u0b0.
  2. Brush baking sheet with some melted butter.
  3. With a very sharp knife or a mandoline slicer, thinly cut one unpeeled potato lengthwise into about 24 (1/16-inch thick) slices.
  4. Arrange potato slices on buttered baking sheet and brush top of each with some melted butter.
  5. Place one or two parsley leaves on each potato slice.
  6. Thinly slice remaining potato; place one slice to cover parsley.
  7. Brush top with melted butter.
  8. Bake potato crackers 10 minutes; turn over and bake until golden brown and crisp, about 10 minutes longer.
  9. Arrange crackers on serving plates.
  10. Top each with some goat cheese or cottage cheese spread and serve.
  11. Enjoy!
