G.'S Shrimp Jambalaya Recipe
- 2 lbs. raw shrimp
- 1 pound (2 c.) rice
- 3 lg. onions
- 2 sticks celery
- 1 tbsp. flour
- 3 tbsp. lard
- 1/2 c. parsley
- 1/2 c. onion tops, minced fine
- 1 sm. can tomato sauce
- Salt & pepper to taste
- 1 teaspoon sugar
- 4 c. water (approximately)
- Brown flour in lard, add in onions to make roux, put shrimp and seasonings in, simmer.
- Add in tomato sauce, stir.
- Add in water and come to boil.
- Add in washed rice, stir all together.
- Put cover on.
- Cook on low fire till rice is done, one hour, stirring occasionally till rice is done.
- Sugar is added with tomato sauce to reduce acid taste to tomatoes.
- Yield: 10 or possibly more servings.
