Sweet Mexican Cornbread Casserole Pie
- 2 -3 lbs hamburger
- 1 (8 ounce) can sweet corn
- 1 (8 ounce) can peas
- 1 (12 ounce) can chili with beans or 1 (12 ounce) can kidney beans
- 1 (8 ounce) bottle maple syrup (real or imitation)
- 2 taco seasoning mix
- 15 slices American cheese or 15 slices Velveeta cheese
- 3 (8 ounce) boxes cornbread, muffin mix
- 1 (6 ounce) can poblano peppers, diced
- Pre-heat oven to 400 degrees.
- Casserole Mixture:.
- Brown hamburger in frying pan, add Taco mix and about 1/4 bottle of maple syrup.
- Fry until completely cooked.
- Drain off fat.
- In large mixing bowl, combine hamburger mix, corn, peas, & chili.
- Heat in microwave 5 minutes.
- Add 5 slices of cheese and heat in microwave 5 minutes.
- Repeat this process until all slices of cheese are mixed into ingredients well.
- Heat 5 more minutes and place in oven safe large baking dish or medium disposable roasting pan, spreading evenly.
- Make sure you have at least 3/4 to 1 inch of space from the top of the mixture to the top of the baking dish.
- Cornbread Topping:.
- Follow instructions on Corn Bread/Muffin mix, and combine ingredients in medium mixing bowl.
- Add remaining maple syrup to corn bread mixture and stir well.
- Spread corn bread mixture evenly on top of hamburger mixture and place in oven at 400 degrees for approximately 25 minutes or until golden brown.
- Make sure that the corn bread is done completely, take tooth pick and put in center of corn bread.
- If nothing sticks to it, its done.
- Remove and let stand 3 to 5 minutes then serve.
