Sunflower and Sprout Sandwich

  1. Mash tofu with fork.
  2. Add sunflower seeds, peanut butter or tahini, mayonnaise, lemon juice and garlic; mix well.
  3. Adjust seasonings.
  4. Spread tofu mixture on 4 slices of bread.
  5. Top with sliced tomato and sprouts.
  6. Top with second slice.
  7. Makes 4 sandwiches.
