Texas Caviar
- 1 cup celery, Chopped
- 1 small onion, Chopped
- 1 cup green pepper, Chopped
- 1 (14 ounce) can white shoepeg corn
- 1 (14 ounce) can pinto beans
- 1 (14 ounce) can black-eyed peas
- 1 (2 ounce) jar pimientos (small)
- 1 teaspoon salt
- 12 teaspoon pepper
- 1 tablespoon water
- 34 cup vinegar
- 12 cup oil
- 1 cup sugar
- Drain and rinse all canned veggies.
- Chop all veggies and place in a container.
- Pour sauce (recipe below) over vegetables in the container and marinade mixture overnight.
- To Make Sauce:.
- In a small saucepan, combine salt, pepper, water, vinegar, oil, and sugar.
- Bring to boil until ingredients have combined.
- Remove from heat and use while still hot.
