Whole Wheat Pasta With Caramelized Onion, Kale and Garlicky Bread Crumbs

  1. In a large skillet over medium heat, melt the butter or heat up the olive oil.
  2. Stir in 3 anchovies to the skillet, cook until melted, about 2 minutes.
  3. Stir in the garlic and cook 1 minute.
  4. Stir in the bread crumbs and toast until golden, 3 to 4 minutes.
  5. Transfer to a bowl.
  6. Clean and dry the skillet and return it to a medium-high heat stove.
  7. Add the oil, the onion and a pinch of salt.
  8. Cook, stirring occasionally, until very soft and caramelized, about 18 minutes.
  9. Chop the remaining 2 anchovies and put them to the skillet.
  10. Cook until melted.
  11. Stir in the kale or Swiss chard, a handful at a time, and cook until wilted, about 4 minutes.
  12. Cover and keep warm.
  13. Bring a large pot of salted water to a boil.
  14. Add the pasta and cook according to package directions.
  15. Drain well.
  16. Toss with the kale mixture and bread crumbs, season with salt and pepper and drizzle with extra-virgin olive oil.
  17. Serve warm or chilled.
