Sweet Potato with Cashews

  1. Cook potatoes in enough salted water to cover until tender.
  2. Drain, peel, and cut into thick pieces.
  3. Combine brown sugar, cashews, ginger and salt.
  4. Layer 1/2 each of the potatoes, peaches and brown sugar mixture.
  5. Repeat layers.
  6. Dot with butter.
  7. Bake, covered, in a 350 degree oven for 30 minutes.
  8. Uncover and bake for 10 minutes more.
  9. Spoon syrup over all before serving.
