Lo To No Cholesterol Casserole Recipe

  1. Cut all fat from chicken.
  2. Place in saucepan with minced onion, pepper and pimento.
  3. Cover with water, bring to boil, reduce heat and simmer for 1 hour.
  4. Allow to cold in broth.
  5. Lift out chicken to plate.
  6. Strain broth through sieve.
  7. Set broth aside.
  8. Place onion and pepper from sieve back in pan and add in yogurt, egg beaters, mustard, salt, pepper and poultry seasoning.
  9. Add in sufficient broth to make a "runny" sauce 1/2 to 1 c..
  10. Cut chicken pcs into bite-size portions and stir into prepared sauce.
  11. Spray a 9 x 11 inch pyrex dish with vegetable spray.
  12. Place chicken fold in dish.
  13. Sprinkle stuffing mix over top and bake at 350 degrees for 30-40 min, till bubbly at the bottom.
  14. 4 servings.
