Lamb With Black Olives
- 600 g lamb chops
- 100 g black olives (deboned and chopped)
- 2 tablespoons olive oil
- 1 teaspoon origanum
- 1 small hot pepper
- 2 tablespoons lemon juice
- 1 tablespoon flour
- salt
- Coat lamb chops with flour and place them in an earthen ware pan with olive oil.
- Saute on both sides for about 6 minutes.
- Remove a small part of the oil, add to the pan chopped olives, lemon juice, origanum and hot pepper.
- Adjust seasoning, cook for another 4 minutes and serve hot.
