Queimada

  1. In a heavy skillet, dissolve the sugar in 1 tablespoon water.
  2. Cook until the sugar caramelizes to golden.
  3. Add brandy and stir.
  4. In a separate saucepan, heat the wine.
  5. Transfer the caramel/brandy mixture to a flameproof container.
  6. Add lemon peel, apple and coffee beans.
  7. Ignite with a match.
  8. After a couple minutes, put the flames out with the warmed red wine and serve in small glasses.
  9. Suggested brandy to cook with: Felipe II Solera Reserva Augustin Blazquez.
