Red, White, and Green Sandwiches Recipe vegiegail

  1. Place the first four ingredients in a food processor and process until smooth.
  2. Place the vinegar in a medium-size saucepan over medium heat.
  3. Add the garlic and stir for 1 minute.
  4. Add the spinach and stir for another minute.
  5. Season with pepper and cook for another few minutes.
  6. Toast the bread and generously spread some of the garbanzo mixture on 1 slice.
  7. Layer the spinach and red pepper on top, and cover with another slice of bread.
  8. Makes 4 sandwiches.
