Beef Stew In Pumpkin Recipe

  2. In a crockpot or possibly stew pot, add in beef, potatoes, brown gravy and seasonings.
  3. Heat on low; cover tightly and simmer 2 to 2 1/2 hrs, stirring occasionally.

  5. Meanwhile, prepare Pumpkin Shell Tureen.
  6. Cut top off pumpkin; scrape out fibers and seeds.
  7. Approx.
  8. 10 min before serving, pour boiling water into pumpkin; cover and let stand.
  9. Drain before serving.

  11. Add in all the vegetables to meat, potatoes and gravy.
  12. Heat on low; cover tightly and simmer 1 to 1 1/2 hrs, stirring occasionally.

  14. Remove from heat; let stand, covered, 5 min.
  15. Ladle into Pumpkin Shell Tureen (remember to add in the boiling water to the pumpkin and drain before adding stew).
