Vickys Seasonal Ice Cream with Free-From Option
- 500 grams vanilla ice cream, see my profile for a dairy/soy-free recipe
- 100 grams marzipan
- 4 tbsp cranberry sauce
- 40 grams dried cranberries
- Let the ice cream sit out to soften a little or put it in the microwave for a few seconds
- Dice the marzipan into small pieces around half the size as the dried cranberries
- Mix the marzipan, cranberry sauce and dried cranberries into the ice cream
- Put into a container and freeze until set
- Serve with Simnel cake at Easter and goes well with Christmas pudding if you're not a brandy sauce lover.
- I sometimes add chopped pistachio nuts for extra colour if serving on it's own
