Chicken Quesadillas Recipe

  1. Shred cheese.
  2. Drain chiles.
  3. In a little butter, cook chicken until done.
  4. Cool and cut into very small pieces or shred.
  5. On one tortilla layer shredded cheese, sprinkle diced green chiles and cover with chicken.
  6. Place in frying pan greased with butter.
  7. Place another tortilla on top.
  8. Cook on both sides like a grilled cheese.
  9. Serve warm with salsa and/or guacamole and lowfat sour cream.
