Cranberry Pear Sauce
- 3 cup fresh cranberries
- 1 cup sugar
- 1/2 cup orange juice
- 1 tsp minced lemon peel
- 3 fresh ripe pears, peeled, cored and diced into 1/2 inch or smaller pieces
- Cook the cranberries and sugar over medium heat until the berries start to burst open, roughly 10 minutes.
- Add the pears, lemon peel and orange juice.
- Cook until the pears are tender but don't let them overcook to the point the dissolve (they will turn a pretty red from the cranberries), roughly 5 to 8 minutes.
- Stir occasionally so the sauce doesn't burn.
- When cooked, cool, and then store in the refrigerator and serve chilled.
