Spiced Creamy Pumpkin Soup
- 3 cups chicken stock
- 1 cup half-and-half
- 1 (15 ounce) can pumpkin puree
- 3 tablespoons dark brown sugar
- 1 teaspoon chili powder
- 12 teaspoon cinnamon
- 2 teaspoons cocoa powder
- 12 teaspoon sweet paprika
- 1 tablespoon flour
- 1 teaspoon salt
- Bring chicken stock and half and half to boil in heavy medium saucepan.
- Whisk in canned pumpkin, brown sugar ad spices.
- Reduce heat to medium and simmer until soup thickens slightly and flavors blend, about 20 minutes.
- Can prepare this soup 1 day ahead.
- Cool soup place in fridge and reheat wen ready to eat next day.
- Just give an occassional stir while reheating.
- Serves 4.
