Walnut Butter Cookies
- 1 cup ground walnuts
- 6 teaspoons equivalents sugar substitute
- 3 tablespoons rum
- 2 eggs, separated and at room temperature
- 38 cup butter
- 1 tablespoon protein powder
- 13 cup walnuts, coarsely chopped
- Preheat oven to 350.
- Cream egg yolks with sugar substitute.
- Beat egg whites until stiff and set aside.
- Cream together all ingredients except coarsely chopped walnuts and fold in egg whites.
- Put dough (1 tablespoon at a time) on buttered cookie sheet, place walnuts on top, and bake for about 40 minutes or until golden.
